Ordinary pasta can be turned into an exquisite dish of Italian cuisine if you follow simple tips.
Italians know the secrets of cooking pasta, which turn ordinary spaghetti into a dish of haute cuisine. Earlier we wrote how to properly cook pasta, so that they do not stick together. And if you want to cook perfect pasta like in an Italian restaurant – stick to it advice the famous Ukrainian chef Yevgeny Klopotenko, who knows Italian cuisine well.
Choose the right type of pasta
To prepare pasta like in Italy, choose pasta made exclusively from durum wheat varieties. Such pasta is also produced in Ukraine, but it is better to choose Italian imported products – usually they are not much more expensive.
Use more water
So that the pasta does not stick together and cooks evenly, pour a lot of water into the pan. It is recommended to use at least 1 liter of water and 10 g of salt per 100 g of pasta.
Make homemade sauce
Italian pasta cannot be prepared with store-bought ketchup. Make a homemade sauce and add chopped basil and grated cheese to it. Then the pasta will be very tasty and completely natural. Earlier we wrote how to make tomato ketchup at home.
Add some sugar and pasta water to the sauce
If you are preparing a homemade sauce, you should add a small pinch of sugar to it. This way, the dish will acquire a new harmonious taste and balance the acidity of the tomatoes. It is also recommended to add a few spoons of the water in which the pasta was cooked to the sauce.
Cook pasta al dente
Italians cook pasta not until it is fully cooked, but until it is al dente, when the dough is slightly undercooked. To do this, cook the pasta for 1 minute less than indicated on the package.
Add fresh herbs and cheese
In Ukraine, pasta is usually served with a lot of minced meat or with cutlets. However, Italians know that everything is ingenious – simple. Add a couple of spoons of olive oil to the pasta, grate the cheese and chop the greens – and you will have a complete Italian dish.
